"Chinjao Rosu" is a delicious Japanese take on the Chinese "pepper steak" stir fry dish. This version can be made using pork or beef and any color of bell pepper. It's so quick and easy to make yet still packed with flavour!

what you'll need:

» pork chops (or beef steak) » bamboo shoots  » bell peppers » ginger » garlic » sesame oil » egg » sake » soy sauce

for the sauce:

» oyster sauce » soy sauce » sugar » chicken stock powder » corn or potato starch (to make a slurry)

flatten the meat

Wrap the pork or beef in plastic wrap and pound until approx 1cm thick.

Cut the meat into strips about 1/2 - 1cm thick. Julienne all of the vegetables.

Velvet the meat

Crack an egg into a bowl and whisk. Add sake, salt and soy sauce along with the meat strips. Add corn starch and mix.

Add a drizzle of sesame oil and mix again. Set aside for later.

Make the sauce

Mix oyster sauce, soy sauce, sugar, water and chicken stock powder in a small bowl. Make a slurry with corn starch and mix it in. Set aside for later.

Cook the meat

Heat a wok on medium-high and add a drizzle of oil. Add the contents of the bowl of meat/egg mixture. Fry until pork is cooked through and transfer to a plate for later.

In the same wok, stir fry julienned bamboo shoots for 1-2 minutes.

add the rest of the vegetables

Add the bell peppers, ginger and garlic to the wok. Stir fry for 2-3 minutes.

Add the meat back to the wok and mix.

Pour in the sauce

Turn off the heat and pour the sauce you made earlier into the pan. Mix well and heat up the sauce using the residual heat.

Dish up

Once the sauce is glossy and everything is evenly coated, dish up. Best served with rice.
