what you'll need to make dashi:

» kombu (dried kelp) » katsuobushi (bonito flakes) » dried sardines (optional) » water » kitchen paper » sieve

what you'll need for miso soup:

» firm tofu » aburaage (fried tofu) » wakame (seaweed) » spring onion » miso paste

Soak dashi ingredients

Soak kombu and dried sardines (if using) in cold water for 30 minutes.  (Remove the heads of sardines before soaking.)

Add bonito flakes and heat

Place the pan on the stove and turn on the heat on med-low. Add the bonito flakes and bring to a simmer. (Do not boil.)

Simmer

When small bubbles appear around the edges (almost boiling) turn down the heat to low and simmer for 10 minutes.

Strain

Line a sieve with a sheet of kitchen paper and place it over a heatproof bowl. Pour the dashi through the sieve.

Dashi complete

Transfer your homemade dashi to a saucepan ready to make the miso soup.

Cut ingredients

Cut the ingredients for your miso soup. Hard vegetables should be cut small and thin to cook them quickly, tofu should be cut bigger to stop it falling apart.

Add ingredients

Bring the dashi back to almost boiling and add your vegetables, add hard vegetables first and the softer vegetables and aburaage a few minutes later.

Simmer

Lower to a simmer and add soy sauce. Mix to evenly distribute it through the broth.

Add miso paste

Add the miso paste by placing it on a mesh spoon and dipping it in the broth. Whisk it in gradually. This will prevent lumps of miso paste in your soup.

Add tofu

Add the tofu and allow it to simmer for 2-3 more minutes. Remove it from the heat and dish up.

Dish up

Pour into serving bowls and sprinkle with finely chopped spring onion!
