» graham crackers » unsalted butter » lemon zest » gelatin powder » cream cheese » natural yogurt » caster sugar » lemon juice » vanilla essence

Melt butter

Place cubed butter into a microwavable container and melt in the microwave in 20 second intervals.

Zest a lemon

Grate the lemon zest into the melted butter and mix.

Crush the crackers

Place the graham crackers in a zip lock bag and crush with a rolling pin. (For a finer texture use a food processor.)

Add the butter

Pour the lemon infused butter into the bag and rub together until evenly coated.

Form the base

Pour the crumbs into a cake pan lined with greaseproof paper (preferably with a pan with a removable base) and flatten with a glass cup. Rest in the fridge until later.

Bloom gelatine

Mix gelatine powder with water in a microwavable bowl and leave to bloom for 5-10 minutes.

Soften cream cheese

Add cream cheese to a microwavable mixing bowl and microwave in 20 second increments until soft enough to mix with ease.

Mix cheesecake batter

Add sugar, yogurt, lemon juice and vanilla one at a time, whisking thoroughly between each ingredient.

Melt gelatine

Microwave the gelatine in 20 second intervals and mix each time until melted. (Alternatively, use a double boiler/bain marie)

Add gelatine to batter

Pour the melted gelatine into the cheesecake batter and mix until evenly distributed.

Pour onto base

Pour the mixture onto the chilled base. (For extra smooth results, pour it through a fine mesh sieve.)

Chill

Chill in the fridge for 3-4 hours (preferably overnight). Decorate with lemon slices and enjoy!
