what you'll need:

» beef mince » onion » panko breadcrumbs » milk » nutmeg » salt and pepper

and for the sauce:

» Worcestershire sauce » tomato ketchup » Dijon mustard » honey

Fry the onion

Finely dice the onion and fry in butter until golden and translucent. Once cooked, leave to cool.

Mix ingredients

Mix the beef, salt, pepper, nutmeg and cooled onion in one bowl, and the panko and milk in the other.

Combine

Add the panko mixture to the meat and knead until the ingredients are well distributed. Be careful not to over-knead.

Shape

Divide the mixture in two and shape into patties Toss each patty from one hand to the other a few times to push the air out.

Make a dent

Push a dent in the centre of one side of each patty. (This will help it cook more evenly.) Rest in the fridge for 20-30 minutes.

Fry

Heat a pan on med-high and add vegetable oil. Fry patties for 2-3 minutes with the dent side facing upwards.

Cook through

Once browned, flip the patties over and reduce the heat to medium low. Fry for 3-4 minutes or until cooked through. (Check the centre with a meat thermometer or pierce and cook until the juices run clear.)

Make the sauce

Transfer the patties to serving plates. Using the same pan, add Worcestershire sauce, ketchup, Dijon mustard and honey and simmer until thick and glossy.

Dish up

Generously coat the hamburg with the sauce and serve with your favourite side dishes!
