what you'll need:

» Japanese curry roux » meat of your choice  » onions » carrots » potatoes » garlic » cooked white rice

» red wine » coffee » chocolate » soy sauce » ketchup » butter

Caramelise onions

Fry sliced onions in a pan with olive oil for 10 mins. Lower the heat, sprinkle with salt and cook for 30 mins. Stir occasionally and add small amounts of water to prevent sticking.

Cut the meat, carrots and potatoes into bitesize pieces. Make sure the carrots and potatoes are similar sizes to ensure even cooking.

Fry garlic

Heat a large pot on medium and add butter and crushed garlic. Fry until the butter is melted and the garlic is fragrant.

Seal the meat

Add the meat to the pot and brown the edges in the garlic infused butter to seal the meat.  

Add vegetables

Add the carrot and potato to the pot, mix and cook for a few minutes. Add the caramelised onion and stir again.

Add liquids

Add 700-900ml of water (depending on the brand of roux.) If you want to add red white substitute 10% of the water for wine. (e.g. 850ml = 765ml water + 85ml wine)

Simmer

Bring to a boil and then lower the heat to simmer. Simmer for 20 minutes with a lid placed slightly ajar. Scoop out any foam that builds up on top. (Add soy sauce here.)

Add the roux

After 20 minutes add the roux and stir it in until dissolved. Simmer without the lid for 5-10 minutes or until thickened. (If it becomes too thick, add water in 50ml increments.)

Add secret ingredients

Add secret ingredients like coffee, chocolate, ketchup etc to taste. Add a little at a time and be sure to taste test between each addition.

Dish up

Serve up with Japanese white rice and fukujinzuke pickles.
