» boneless chicken thigh » flour » egg » potato starch » oil » sugar » soy sauce » rice vinegar » chili threads (optional) » lettuce

for the tartar sauce:

» hard boiled egg » white onion » pickled gherkin » lemon juice » Japanese mayonnaise » sugar » ketchup » salt and pepper » dry parsley

Finely dice

Finely dice the pickled gherkin, white onion and boiled egg for the tartar sauce.

Add to a bowl

Transfer them to a bowl and add the lemon juice, Japanese mayonnaise, sugar, ketchup, salt, pepper and dry parsley.

Mix and chill

Mix thoroughly until all the ingredients are evenly distributed. Cover and chill in the fridge until it's time to serve.

Make nanban sauce

Mix sugar, soy sauce and vinegar in a small bowl to make the nanban sauce. Set aside for later.

Prepare chicken

Cut the chicken thigh into bitesize pieces and sprinkle with salt, pepper and flour. Mix well.

Make a batter

Crack an egg into the bowl and mix well, then add potato starch and mix again.

Fry

Heat a large frying pan on medium. Once hot, add the oil and fry the chicken for 3 minutes on each side.

Wipe the pan

Push the chicken to one side and use kitchen paper to wipe away the excess oil.

Add the sauce

Reduce the heat to medium-low and add the nanban sauce.

Coat the chicken

Move the chicken around the pan until each piece is completely coated. The sauce should thicken slightly.

Serve

Arrange lettuce leaves on a plate and pile up the chicken in the middle. Top with the chilled tartar sauce and a sprinkle of chili threads. Enjoy!
