what you'll need:

» strawberries » mascarpone cheese » vanilla essence or extract » heavy cream » light brown sugar » white bread (shokupan)

Prep strawberries

Wash the strawberries and dry them thoroughly. Cut off the stems and set aside.

Whisk mascarpone

Measure the mascarpone cheese out and place in a mixing bowl with a few drops of vanilla. Whisk until smooth.

Whip the cream

Whip the heavy cream and sugar in a separate bowl until it's thick with stiff peaks.

Combine

Mix the mascarpone and whipped cream together until well combined. (Be careful not to overmix.)

Trim bread

Cut the crusts off each slice of bread.

Add filling

Spread a generous layer of cream on each piece of bread, making sure to leave some cream for later. Arrange 3 strawberries diagonally through the centre of the bread and place 1 in the two empty corners.

Fill the gaps

Use the leftover cream to fill in the gaps between the strawberries.

Wrap and chill

Close the sandwich and gently press the edges to seal. Wrap with plastic wrap and draw a guideline where the row of strawberries are so you know where to cut later. Refrigerate for 3-4 hours.

Cut

Once it's chilled, cut the sandwich with the wrap still on, following the guideline drawn earlier.
