» fresh strawberries » sugar » lemon juice » milk » double cream (optional) » condensed milk » ice  (optional)

Prepare the strawberries

Wash and dry the strawberries then cut off the stems.

Cut the strawberries

Finely dice the strawberries. They cook faster if they're cut small.

Transfer to pan

Transfer the chopped strawberries to a small sauce pan and add the sugar and lemon juice.

Heat

Place the pan on the stove and heat on medium. As the strawberries begin to soften, crush them with a fork.

Crush

Continue to stir and gently crush, but not too much. There should still be larger chunks of strawberry intact.

Remove from heat

Once the strawberries reach a jam-like consistency, remove the pan from the heat and allow to cool for a few minutes.

Chill

Transfer the strawberries to a heatproof bowl and place the bowl in an ice bath to help it cool quickly.

Prepare the milk

Mix the milk, double cream and condensed milk in a jug until well combined.

Assemble

Pour the cooled strawberry mixture into a serving glass (add ice if desired) and top with the milk mixture.
