» cake flour » dashi (or water) » sugar » mirin » katsuobushi (bonito flake) » shredded cabbage » tenkasu or ikaten » beansprouts » pork belly » egg

okonomi sauce and toppings:

» Worcestershire sauce » oyster sauce » ketchup » honey » soy sauce » chopped spring onion » egg yolk (optional)

Yakisoba sauce

Mix oyster sauce, soy sauce, Worcestershire sauce, ketchup, sake, sugar, black pepper and sesame oil in a bowl.

Make simple yakisoba

Fry the noodles with a drizzle of vegetable oil until slightly crispy and then stir fry with the yakisoba sauce. Set aside for later.

Make crepe batter

Whisk cake flour, dashi stock (or water), sugar and mirin in a jug until smooth.

Make crepe

Heat a pan on medium low and add a drizzle of oil. Wipe off the excess with kitchen paper and pour 3/4 of the batter into the center. Spread it out using the back of a spoon until thin and even.

Sprinkle with bonito

While the batter is still wet, sprinkle the surface with katsuobushi (bonito flakes).

Add layers

Top with a layer of shredded cabbage, tenkasu (tempura bits) and beansprouts. Drizzle the rest of the batter over the top.

Add pork

Lay the thin slices of pork over the top.

Cook

Place a lid on top and cook for 5 minutes on a low/medium-low heat. The ingredients will cook in the steam.

Flip

Carefully flip and continue to cook with the lid for 5 minutes or until the pork is cooked through.

Make okonomi sauce

While the okonomiyaki is cooking, make the okonomi sauce by mixing Worcestershire sauce, oyster sauce, ketchup, honey and soy sauce in a small bowl. Set aside for later.

Whisk egg

Whisk an egg with a pinch of salt until the white and yolk is combined.

Fry egg crepe

Transfer the okonomiyaki to a plate and wipe out the pan. Spread a new layer of oil and pour the egg into the pan. Fry until 80% cooked.

Add the noodles

Place the yakisoba noodles on top of the egg crepe.

Add the other half

Place the other half of the okonomiyaki on top of the noodles with the crepe side facing up.

Transfer to serving plate

Carefully flip the okonomiyaki out onto a serving plate so that the egg is on the top.

Add toppings

Coat the egg with the okonomi sauce and top with chopped spring onion and an egg yolk. Enjoy!
