what you'll need:

» thinly sliced beef » onion » rice » pickled ginger (benishoga) » egg (optional) » shichimi togarashi (Japanese chilli powder)

gyudon broth:

» dashi » soy sauce » mirin » sake » light brown sugar » shiro dashi / light soy sauce » ginger paste » garlic paste » chicken bouillon powder

Cut the onion

Cut the onion into medium wedges.

Make gyudon broth

Add dashi, soy sauce, mirin, sake, light brown sugar, white dashi, ginger paste, garlic paste and chicken buoillon powder to a sauce pan.

Soften the onions

Heat the broth on medium and add the onions. Bring to a boil and lower to a simmer. Simmer until the onions are softened.

Cook the beef

Add the thinly sliced beef and continue to simmer until the meat is cooked through.

Dish up

Dish up a portion of rice and top with the cooked beef and onions. Drizzle a ladle-full of sauce over the top.

Top with pickled ginger (benishoga). Extra optional topping includes a soft boiled egg and Japanese chilli powder (shichimi togarashi).
