» chicken thigh » potato starch » soy sauce » sake » mirin » sugar » grated garlic » dashi stock

» shredded green cabbage » chopped green onion » Japanese mayonnaise » shredded nori » chili threads » soft boiled eggs

Prepare chicken

Cut the chicken into bitesize pieces and sprinkle with salt and pepper. Lightly coat with cornstarch and heat a pan on medium.

Fry

Add oil to the pan and place the chicken in a single layer with the skin side down. Fry for 4 minutes or until crispy and golden.

Flip

Turn the chicken pieces over and fry on the other side for 2 minutes.

Add teriyaki sauce

Mix the soy sauce, sake, mirin, sugar, grated garlic and dashi stock in a small bowl and then pour it into the pan.

Thicken

Continue to cook until the sauce thickens to a syrup-like consistency and mix the chicken until evenly coated.

Assemble

Add rice and a layer of shredded cabbage to serving bowls.

Top with the chicken.
