Clean the shrimp

Remove the shells and veins of the shrimp, then place in a bowl and sprinkle with corn starch and salt. Rub until evenly covered, rest for a few minutes and then wash with water and pat dry.

Fry the shrimp

Heat a pan on medium. Add a drizzle of oil and fry the shrimp until pink. Once cooked, transfer to a plate lined with kitchen paper to absorb any excess oil.

Fry aromatics

In the same pan, lower the heat and add garlic, ginger and Japanese leek. Once fragrant, add ketchup and Chinese chili bean paste and fry together for 1-2 minutes.

Make sauce

Add water and chicken stock powder to the pan, increase the heat to medium and bring to a boil.

Thicken

Return the shrimp to the pan and reduce the heat to simmer. Make a slurry with cold water and corn starch. Pour it into the pan and mix well. Simmer until thickened, then season with salt, pepper and sugar.

Serve

Transfer to a serving plate and garnish with green onion, sesame oil and chili threads. Best enjoyed with rice!
