Combine eggs and sugars

Add the eggs, sugar and honey to a bowl and mix until well combined.

Add dry ingredients

Sift the cake flour and baking soda into the mixture and gently mix until lump-free.

Loosen

Add water to the mixture and gently whisk until combined.

Chill

Transfer to a pourable container, cover and chill in the refrigerator for 30 minutes.

Preheat the pan

Heat a pan on low for 10 minutes before you start. Grease with a thin layer of cooking oil, use kitchen paper to spread and wipe off any excess.

Fry

Once preheated, pour the batter until 8cm in diameter. Fry 2-4 pancakes at a time depending on the size of your pan. Fry for 1½ to 2 minutes or until bubbles start forming on the surface.

Flip

Flip the pancakes over and fry on the other side for about one minute before transferring them to a plate.

Fill

Add about 2 tbsp of red bean paste to half of the pancakes. Spread it thicker in the middle and thinner around the edges to help make a dome shape.

Assemble & serve

Place the other half of the pancakes on top and gently press the edges down to seal. Enjoy!
