what you'll need:

Whisk eggs

Crack the eggs into a bowl and gently whisk with chopsticks to break up the yolks and whites.

Mix other ingredients

In a separate bowl, whisk dashi stock, mirin, sugar, salt and soy sauce until dissolved and well combined.

Combine

Place a sieve over the bowl of dashi ingredients and pour the whisked egg through.

Gently whisk

Whisk together gently to make the mixture smooth without forming too many bubbles.

Oil the pan

Heat a rectangular pan on medium and grease evenly using cooking oil and a paper towel.

Add the mix

Once the pan is heated, pour the mixture in a thin even layer. Pierce any bubbles with chopsticks and move the pan occasionally to avoid heat spots.

Roll & grease

Carefully peel the edge of the omelette furthest from you and roll towards you. Push it to the back and grease the pan again.

Add more mixture

Pour another layer of mixture and lift up the already rolled piece so it can spread underneath. Once half cooked, roll again.

Repeat

Repeat until all of the egg mixture is used or the omelette has reached the desired size.

Roll

Use a bamboo sushi mat to perfect the shape while it's still warm and make a striped pattern on the surface.

Cut

Cut into thick slices and serve with grated daikon. Enjoy as a appetizer, snack or side!
