Japanese Corn Soup

Sweet and creamy corn potage is one of the most popular soups in Japan! Made from scratch with corn, whole milk and seasonings, it's surprisingly easy to make and only requires 6 ingredients. You can also take it to the next level with my 10 minute homemade crunchy croutons!

what you'll need:

» Corn » Whole milk » Salt » Pepper » Unsalted butter » Onion

homemade croutons:

» Baguette » Olive oil » Melted butter (unsalted) » Salt » Dry mixed herbs

Prepare the corn

Wash the corn and cut the kernels off in strips. Cut the cores into thirds or quarters. (If using frozen or canned corn, you can skip this step.)

Fry onions

Heat a pan on medium and add butter. Once melted, add sliced onion and fry until soft and golden.

Add milk

Lower the heat to low/ medium-low and add the milk and half of the salt and pepper. If using fresh corn, add the cores. Bring to a low simmer. Do not boil.

Add kernels

Turn off the heat and discard the cores. Add the kernels and the other half of the salt and pepper, then mix. Turn the heat back on to low and bring to a low simmer once more.

Cool

When small bubbles appear around the edge, remove from the heat and leave to cool for 10 minutes.

Blitz

Transfer the corn potage to a blender and blitz until smooth. (Alternatively, use an immersion blender.)

Strain

Pour the mixture into a sieve and work it through using a spatula. This will make it extra smooth.

Reheat before serving

Reheat the corn potage before serving (either over the stove or in the microwave.)

Mix croutons

Preheat the oven to 180°C (360°F). Mix cubed baguette, olive oil, melted butter, salt and dry mixed herbs in a large mixing bowl.

Bake

Once the oven is hot, transfer the croutons to a baking tray in a single layer and bake for 10 minutes on the bottom shelf.

Serve

Divide the reheated soup into serving cups and top with your homemade croutons. (Garnish with cream and parsley for an extra finish.) Enjoy!
