Chilled Chicken & Citrus Somen Noodle Soup

This delicious chicken and citrus somen noodle soup combines the refreshing elements of a salad with the satisfying taste of noodle soup, it's served cold and has a kick of citrus flavour. Topped with tender chicken breast, crunchy cucumber, soft boiled egg and slices of sudachi (or lime!), it's easy to make and the perfect way to cool down on a hot day!

Chicken & Citrus Somen Noodle Soup

what you'll need:

» chicken breast » salt » corn starch » sake » mirin » Chinese chicken stock powder » spring onion » garlic paste » soy sauce

what you'll need:

» somen noodles » ice cubes » sudachi (or lime/lemon) » cucumber » mirin » soft boiled egg » sesame oil » black pepper

Prep the chicken

Dry the chicken breast with kitchen paper, sprinkle both sides with salt and coat with a thin layer of corn starch.


Mix cooking "sauce"

In a microwavable bowl add sake, chicken stock powder, sugar, mirin and salt. Mix well.


Coat the chicken

Coat the chicken in the sauce and then loosely cover the bowl with plastic wrap. Microwave for 1 1/2 minutes at 600W.


Turn the chicken

Remove the wrap (be careful of steam) and flip the chicken over. Cover again and microwave for 1 1/2 min at 600W. Once done, leave to rest in the microwave for 10 minutes.


Chill the chicken

After resting for 10 minutes in the steam, allow the chicken to cool. Once it's cool to the touch, transfer to the refrigerator and chill until serving time. (Keep the juices for the soup.)


Mix soup

Mix water, chicken stock powder, salt, garlic paste, sugar and soy sauce in a microwavable jug. Microwave for 2 1/2 minutes at 600W.


Cool & add juices

Allow the soup to cool and then add chopped spring onion and the juices leftover from the microwaved chicken breast.


Cover & chill

Cover the jug with plastic wrap and chill in the refrigerator for 30 minutes to 1 hour.


Cook noodles

Boil the somen noodles according to the instructions on the packaging and then wash with cold running water. Chill with ice.


Dish up

Place the noodles in serving bowls and pour in the chilled soup. Slice the chicken breast and add julienned cucumber, sliced citrus and soft boiled egg. Enjoy!
