INGREDIENTS

- slab skinless pork belly - Japanese leek (negi) - ginger root - garlic - soy sauce - honey - sake - yellow miso - sugar - mirin - oyster sauce

Tenderize

Start by stabbing the surface of the pork all over with a fork. This will tenderize the meat and help it better absorb the marinade.

STEP 1

Marinate

Add all of the ingredients to a large sealable freezer bag and massage until combined. Place the pork and leek in the bag and massage until evenly covered. Seal and rest in the refrigerator overnight.

STEP 2

Roast

Preheat the oven to 200 °C (392 °F) and place the pork on a lined roasting tin. Once heated, roast on the bottom shelf for 10 minutes. Reduce the heat to 140 °C (284 °F) and roast for 1 hour.

STEP 3

Rest

Check the pork is cooked through. It shouldn't be pink and internal temperature should be at least 62.8 °C (145 °F). Once cooked through, rest for 10-15 minutes.

STEP 4

Cut

Cut into slices and enjoy with ramen, donburi or as a snack!
