what you'll need:

» spaghetti » spinach » Japanese mushrooms (I use eryngii and shimeji) » bacon » unsalted butter » soy sauce » salt and pepper » chopped spring onion

Prep the ingredients

Start boiling the water for your pasta. While it's heating, roughly cut the mushrooms and spinach, and cut the bacon into lardons.

Boil pasta

Once the water comes to a rolling boil, add a generous pinch of salt and add the spaghetti. Cook until al dente (2-3 minutes shorter than the instructions state.)

Fry bacon and mushrooms

While the pasta cooks, heat a frying pan on medium and add butter and oil. Once hot, fry the bacon and mushrooms together until the bacon is cooked through.

Add spinach

Add the spinach to the pan along with a pinch of salt and pepper. Sauté for 1 minute.

Add the pasta

Transfer the pasta to the pan and add the soy sauce. Mix well and dish up.

Garnish

Sprinkle with chopped spring onion and enjoy!
