what you'll need:

» yellowtail fillets » soy sauce » mirin » sake » sugar » cornstarch » cooking oil

Marinate

Place the yellowtail fillets in a sealable bag and add ½ tsp soy sauce and mirin per fillet. Marinate in the refrigerator for 15 minutes.

Prepare sauce

Mix soy sauce, mirin, sake and sugar in a bowl until dissolved. Set by the stove for later.

Dry

Once marinated, pat the surface of the yellowtail dry with kitchen paper.

Coat

Coat the yellowtail in a thin, even layer of cornstarch and pat off any excess.

Fry

Heat a pan on medium and add cooking oil. Once hot, add the fish and fry for 2 minutes on each side.

Add sauce

Increase the heat to high and add the sauce. Fry the fish for 30 seconds on each side or until the sauce has thickened to a syrup-like consistency

Serve

Once the sauce has thickened and evenly coats the fish on both sides, remove the pan from the heat and serve.
