what you'll need:

» dashi stock » soy sauce  » mirin » light brown sugar » udon noodles » green onion » tempura flakes » grated ginger » grated daikon radish » egg yolks

Heat sauce

Pour the dashi, soy sauce, mirin and light brown sugar into a saucepan. Boil for 1 minute to burn off the alcohol in the mirin.

Dilute

If serving cold, add ice cubes to dilute and cool the sauce. If serving hot, add hot water instead and reheat before serving if necessary.

Cook udon

Boil udon according to instructions on the packaging. Once cooked, drain and rinse with fresh water. If serving cold, add ice cubes to chill.

Divide

Divide the udon and sauce into serving bowls.

Add toppings

Add toppings of your choice and mix well before eating. Enjoy!
