» fillet of beef » salt » pepper » garlic » green onion » sake » mirin » soy sauce » wasabi paste

Pierce

Pierce the fillet of beef all over with a clean fork. This will tenderize the meat and allow the flavors to travel deeper.

1

Season

Sprinkle salt and pepper, and rub garlic paste all over. Cover and allow the fillet to come to room temperature.

2

Fry

Heat an iron skillet on high and once hot, add cooking oil. Place the beef fillet in the skillet.

3

Seal

Fry for 30-45 seconds on each side to seal. The surface should be slightly browned.

4

Wrap and rest

Once the meat is sealed, turn off the heat. Wrap the beef with foil and place it back in the pan to rest in the residual heat for 15 minutes.

5

Cook sake and mirin

Boil the sake and mirin in a small saucepan for 1-2 minutes to burn off the alcohol. Pour into a heat proof bowl.

6

Make sauce

Add soy sauce and wasabi to the bowl and mix until combined.

7

Slice and serve

Once the beef has finished resting, thinly slice and lay it on a plate. Drizzle with sauce and top with chopped green onions. Enjoy!
