what you'll need:

» beef steak » sesame oil » bay leaf » sake » mirin » white pepper » grated apple » salt

» Worcestershire sauce » oyster sauce » grated garlic » grated ginger » coarse salt » black pepper » Japanese chili pepper » Lemon wedges

Cut the beef

Cut off the fatty part of a beef steak. Cut the meat into 3cm square pieces (1¼ inches) and the fat into small cubes.

Marinate

Place the beef in a bag and add sesame oil, bay leaf, sake, mirin, white pepper, grated apple, sea salt, Worcestershire sauce, oyster sauce, garlic and ginger. Massage and marinate for 30 minutes.

Grill

Preheat the grill on medium-high and push the beef onto skewers alternating meat and fat. Place on a wire rack, sprinkle with coarse salt and pepper and grill for 5 minutes.

Turn

Turn the skewers over and sprinkle with another pinch of coarse salt and black pepper. Grill for 4 minutes.

Remove from the grill

Once cooked through and slightly charred, remove from the grill.

Serve

Sprinkle with a pinch of Japanese chili pepper and a squeeze of lemon juice (optional). Enjoy!
