» Chinese style noodles » pork belly  » onion » cabbage » pickled ginger (benishoga) » bonito flakes (katsuobushi) » seaweed powder (aonori)

yakisoba sauce:

» oyster sauce  » soy sauce  » Worcestershire sauce  » ketchup  » sake  » sugar  » black pepper » sesame oil

Homemade YAKISOBA sauce

Mix the oyster sauce, soy sauce, Worcestershire sauce, ketchup, sake, sugar, pepper and sesame oil in a small bowl.

Crisp up the noodles

Heat a wok on medium-high and fry the noodles until lightly crispy. Once crisped up, transfer to a plate and set aside for later.

In the same wok, add the pork with a pinch of salt and pepper. Fry until the fat becomes crispy.

Add the vegetables

Add the onion and cabbage to the pan and fry until slightly softened.

Add the  noodles

Push the meat and vegetables to one side and add the noodles back to the wok.

Add the  sauce

Pour the sauce over the noodles only and mix until they're evenly coated.

Mix and  stir-fry

Mix everything together and continue to stir fry for another 1-2 minutes.

Dish up and garnish

Place the yakisoba on serving plates and sprinkle generously with katsuobushi, aonori and benishoga.
