INGREDIENTS

- Manila clams - water - salt - sake - unsalted butter - light soy sauce - green onions

Wash

Place the clams in a colander and wash with running water. Pour water and salt into a bowl and mix until dissolved, then add the clams and soak for 1 hour.

STEP 1

Transfer

Drain the water and rinse the clams once more to remove any leftover sand. Transfer them to a pot and add the sake. 

STEP 2

Steam

Heat on medium and once the sake starts to bubble, reduce to simmer and cover the pot with a lid. Steam with the lid on for 5 minutes or until the clams have opened.

STEP 3

Flavor

Remove the lid and add the butter and soy sauce. Gently shake the pan to mix, and heat until the butter has melted.

STEP 4

Serve

Transfer the clams to a serving plate and drizzle with the sauce leftover in the pot. Sprinkle with chopped green onions and enjoy!
