what you'll need:

» ground pork » spring onion » sesame oil » ginger paste » garlic paste » soy sauce » tobanjan  (Sichuan chili paste) » ramen noodles » pak choi

tantanmen broth

» spring onion » sesame paste  (or smooth peanut butter) » ground sesame seeds » tsuyu (or soy sauce) » rice vinegar » chili oil » chicken stock

fry the pork

Heat a pan on medium and brown the ground pork. Add salt, pepper, soy sauce, garlic paste, ginger paste, chopped spring onion and tobanjan.

reduce the liquid

Stir fry everything together until the liquid is reduced. Remove the pan from the heat and cover with a lid to keep it warm until time to serve.

make the tare

Mix tsuyu, ground sesame seeds, rice vinegar, chili oil, chopped spring onion and sesame paste (or smooth peanut butter) in each serving bowl.

add chicken broth

Mix chicken stock powder with freshly boiled water and gradually add it to each bowl while whisking.

Boil noodles and pak choi

Boil the ramen noodles and in the final minute, add the pak choi to the water. 

Dish Up

Add the noodles, meat and pak choi to the tantanmen broth and garnish with chopped spring onion.
