Taiwan Mazesoba (Nagoya's Spicy Brothless Ramen)

Description

How to make Nagoya's famous Taiwan Mazesoba with spicy, seasoned ground pork and various toppings served over springy ramen noodles. (Serves 2)


Ingredients

Pork mince

  • 1 tsp sesame oil
  • 1/2 tbsp garlic paste
  • 1 tsp ginger paste
  • 1-2 chili peppers deseeded
  • 150g pork mince
  • 50ml dashi (or water)
  • 1 1/2 tbsp sake
  • 1/2 tbsp sugar
  • 1 tbsp oyster sauce
  • 1 pinch of black pepper
  • 1 tsp tobanjan
  • 1/4 sansho pepper (optional)

Tare & Noodles

Toppings

  • 30g Chinese chive
  • 2 tbsp chopped spring onion
  • 2 tbsp katsuobushi (bonito flakes) crushed
  • 2 tbsp tenkasu (tempura bits)
  • 2 tbsp kizami nori
  • 2 egg yolks
  • chili threads (optional)

Instructions

  1. Heat a frying pan on low and add sesame oil, de-seeded chili, ginger paste and garlic paste. Mix together and heat until fragrant.
  2. Turn up the heat to medium and add the pork mince. Mix and fry until cooked through.
  3. Add the dashi (or water), sake, sugar, oyster sauce, black pepper, tobanjan and sansho pepper, mix until evenly distributed.
  4. Simmer on medium for 5 minutes or until liquid is evaporated. Once cooked, turn off the heat and leave it on the stove to keep it warm.
  5. Boil the ramen noodles according to the instructions on the packaging. While they're cooking, add 1/2 tsp soy sauce, 1/2 tsp chicken stock powder and 1 tsp sesame oil into each serving bowl and mix until the powder is dissolved.
  6. Once the ramen noodles are cooked, drain the water and distribute in each bowl. Mix thoroughly until evenly coated in the tare.
  7. Place the seasoned pork mince in the middle and arrange the other topping around the outer edge. Top with a raw egg yolk. 
  8. Mix well before eating and enjoy!
