Maguro Zuke Don (Marinated Tuna Sashimi Bowl)

Description

How to make simple and delicious Maguro Zuke Don (マグロ付丼) with fresh sashimi-grade tuna soaked in a rich soy marinade and served over rice.

Recipe includes cooling/marinating time. Does not include rice cooking time.


Ingredients

  • 2 portions cooked rice
  • 150-200g sashimi-grade tuna (maguro)
  • 50ml soy sauce
  • 50ml mirin
  • 50ml sake
  • 1 small sheet kombu (approx 5g)
  • 1 tsp sesame seeds
  • 2 egg yolks from pasteurized eggs (optional)
  • Perilla leaves (shiso/oba) finely sliced (optional)
  • Wasabi (optional)

Instructions

  1. Pour 50ml soy sauce, 50ml mirin and 50ml sake into a small pan and bring it to a boil on a medium-high heat.
  2. Allow the sauce to boil for 1 min to burn off the alcohol in the mirin and sake.
  3. Remove the pan from heat and allow the sauce to cool down to room temperature. (You can speed up the process by transferring the sauce to a heatproof bowl and placing it in a bowl of ice.)
  4. Lay 150-200g sashimi-grade tuna pieces flat in a wide container (try and keep it to 1 layer).
  5. Place a small piece of kombu over the top of the tuna and then pour the sauce into the container until everything is evenly coated.
  6. Cover it with plastic wrap, the plastic wrap should be in direct contact with the tuna.
  7. If your container has a lid, secure it on. (If not, place another piece of plastic wrap over the top.) Store in the refrigerator for 30 mins.
  8. After 30 mins dish up rice and place the tuna pieces on top.
  9. Pour 1/2 tbsp of the leftover marinade over each bowl.
  10. Sprinkle 1/2 tsp of sesame seeds over each bowl and place a raw egg yolk in the middle.
  11. Garnish with perilla leaves, nori or a blob of wasabi, according to your preference.
  12. Enjoy!

Notes

If you marinate the tuna for longer than the suggested time, the taste will be stronger and the colour will be darker.

If you don't have a rice cooker, I recommend soaking your rice 15 mins before starting the recipe and then cooking it while the tuna is marinating. You can learn how to cook Japanese style rice for donburi on my post here.
