Japanese Ketchup Fried Rice for Adults (Chicken Rice)

How to make sophisticated Japanese ketchup rice (Chicken Rice) for adults with chicken thigh, onion, mushrooms and bell peppers seasoned with a variety of herbs and spices. (Recipe does not include cooking rice. If you want to know how to cook Japanese style rice, see my recipe here.)


Japanese Ketchup Rice Spice Mix

  • 1/2 tbsp Chinese chicken bouillon powder
  • 1 pinch salt and pepper
  • 1/4 tsp chilli powder
  • 1/4 tsp nutmeg
  • 1/2 tsp cumin
  • 1/2 tsp rosemary
  • 1/2 tsp fenugreek
  • 1/2 tsp paprika powder

Japanese Ketchup Rice

  • 1 tbsp unsalted butter
  • 1/2 onion finely diced
  • 1 tsp olive oil
  • 200g chicken thigh sliced or cut into small bitesize pieces
  • 1 tsp garlic paste
  • 1 tbsp red wine
  • 4 brown button mushrooms sliced
  • 30g green bell pepper small dice
  • 400g cooked rice
  • 2 tbsp ketchup
  • 1 tbsp parmesan cheese grated
  • 2-3 fried eggs (optional)
  • 1 tsp parsley finely chopped
  • 3 lemon wedges


  1. Mix the spices in a bowl and set aside for later.
  2. Heat a frying pan or wok on medium high and add the butter.
  3. Once the butter has melted, add the diced onion and fry until transparent.
  4. Push the onion to one side of the pan and add a drizzle of olive oil. Add the chicken thigh pieces, garlic paste and vegetables.
  5. Once the chicken is sealed, add the red wine and spice mix. Stir fry for 1-2 minutes.
  6. Add the rice, ketchup and grated parmesan cheese. Stir fry until the rice is heated all the way through and the spices are well distributed.
  7. Serve with a fried egg, lemon wedges and a sprinkle of parsley.
  8. Squeeze the lemon juice over the rice before eating.
  9. Enjoy!


I recommend using rice that has been cooked and cooled rather than freshly cooked.
