Udon is a type of thick chewy Japanese noodle made from wheat flour. It is a very versatile ingredient and can be used for a lot of different recipes and cooked in different ways.
From cold udon to hot udon, there are many possible ways to use it.
Example usage of Udon
- Kake Udon (かけうどん): In a hot dashi broth
- Zaru Udon (ざるうどん): Served cold with a cold dashi dipping sauce
- Bukkake Udon (ぶっかけうどん): Served hot or cold in a thicker, stronger dashi broth
- Kamaage Udon (釜揚げうどん): Served hot with a hot dashi dipping sauce
- Yaki Udon (焼うどん): Hot udon stir fried with vegetables and meat.
What is Shabu Shabu?
Shabu Shabu is a kind of Japanese hot pot dish where you briefly boil thinly sliced meat and serve it with dipping sauce. There are many different flavours of dipping sauce too!
While beef is mainly used for Shabu Shabu (牛しゃぶ), pork (豚しゃぶ) is also popular choice especially if you put it on salad.

So today’s dish is almost like Shabu Shabu, Udon noodles and Salad in one go! I personally like this dish especially in summer as it’s refreshing and cold!

What is the difference between shabu shabu and sukiyaki?
They both use thinly sliced meat but while you only boil meat in dashi water briefly for shabu shabu, for Sukiyaki, you cook meat and other ingredients such as tofu, spring onion in very strong soy sauce, mirin, sake, sugar base sauce.
Also, Shabu Shabu is usually served with dipping sauce (Ponzu sauce or Sesame sauce), whereas there’s no dipping sauce for Sukiyaki, you use a raw egg for dipping instead.
